Hello everyone, in today’s video I share with you three raw vegan summer salad recipes. These recipes are ideal for lunch or dinner. You can obviously eat fruit by itself as a meal on a raw vegan diet, but I personally like to experiment with different recipes once in a while. I really hope you enjoy them, you will find the list of ingredients down below.
❤️Raw corn salad
1 ear of raw corn (you can use cooked corn too)
Dried fennel (you can use fresh too)
250g of cherry tomatoes
½ cauliflower made into rice (just chop finely or process in the food processor)
3-4 colorful peppers
A spoonful of tahini
One lemon’s juice
A pinch of curry powder or turmeric powder
¼ of watermelon chopped into cubes
1 onion, sliced
One handful of pistachios (optional: don’t add them if you have digestive issues)
The juice of one lemon
Optional: you can use vinegar and it goes great with it
❤️Avocado and tomato salad:
250g of cherry tomatoes (I used red ones, but you can use colorful ones if you have them)
1 yellow pepper, chopped
½ onion, chopped
1 cucumber, chopped
Fresh or dried basil
I only used lemon juice but you can also use a mix of tahini and lemon or any healthy raw vegan dressing.
