Part 1 of a 2 Part Recipe for Nut Free Lemon Marshmallow Cheesecake by Realistically Raw You
Nut Free Dessert Base
1 1/2 cup shredded coconut
1/4 cup flax seeds
6 large dates (pitted)
1 tbsp coconut oil (melted)
1 tsp vanilla or contents of 1 vanilla bean
Pinch of salt
To make the crust, blend together the ingredients for the crust in your Optimum blender until moist and sticks together when pressed. Divide into a muffin trays lined with glad wrap or the base of a small springform pan and press evenly filling the bottoms and flattening the sides. Place in the freezer while preparing the filling.
